What is a Multi Cooker?

A Multi Cooker is a versatile cooking machine that can cook, bake, fry, slow cook, make yogurt, sterilize baby utensils, and do a number of other cooking functions. It has pre-installed programs that can cook specific meals at a touch of a button.


What is the difference between a multi cooker and a slow cooker?

A Multi Cooker can cook in a variety of different temperatures, heating methods and lengths of time. A slow cooker is limited to low temperatures and long cooking times.


What is a Pressure Multi Cooker?

At the start of the programme, the appliance generates an increased pressure inside the working chamber that allows you to reduce cooking time and preserve maximum nutrients. Operation of other programmes is performed at normal pressure.

When adjusting the steam valve position you change the appliance operation principle. If the valve is fixed into the position "High pressure" the appliance is operated in the pressure cooker mode.

At the end of operating the appliance in the pressure cooker mode, open the steam valve so that the pressure in the working chamber was equal to atmospheric pressure.


Which are the parts of a multi cooker and the pressure multi cooker?

The appliance consists of the housing with an electronic block, a heating element, a working chamber and a raisable lid positioned inside.

The control panel is positioned on the outer side of the pressure multi cooker housing.


What is a condensate collecting container intended for?

The condensate-collecting container is used for proper collection of liquid condensed during operation of the pressure multi cooker.


What is a steam valve and a lock valve?

With the help of the steam valve you may control the pressure inside the working chamber. The steam valve is removable, it is recommended to be cleaned after each use.

The lock valve is used for ensuring user's safety during operation of the pressure multi cooker when there is pressure inside the working chamber. It also serves for upper lid lock, and for the pressure release in the working chamber.

RULES OF USING

How to enable the appliance for the first time

To keep you pressure multi cooker in ideal state during operation, remove all stickers from the housing except for the warning labels and serial number label. The absence of the serial number will deprive you of your warranty benefits.
Wipe the pressure multi cooker with a soft, damp but not wet tissue. Use for cleaning the outer of the housing only soft cloth and non-abrasives for washing dishes.


Wipe the housing and heating element with damp, but not wet cloth, then let dry.


How to prepare the multi cooker bowl for operation

Rinse the bowl under running water, dry with a paper towel or let dry. Do not use a sponge with abrasive surface, cleaning powders or chemically aggressive substances for cleaning.


What to do if the appliance has a plastic smell

A new appliance may have a plastic smell. The off-odour doesn't indicate the failure or unreadiness for operation. Follow the instructions to eliminate the off-odour:

  • Put half of the fresh lemon into the bowl and pour 1,5 L/6 cups of water.
  • Properly set the bowl into the housing. CAUTION! To prevent the housing and the heating element from contaminating, always put the ingredients into the bowl first and then fix it into the housing.
  • Set the BOIL programme, the timer for 20 minutes (Normal). To disable the Keep Warm, press the REHEAT/CANCEL button.

What should I use to stir foods in the multi cooker?

Use only the serving spoon and spoon, which are included in set. Do not mix, remove or chop foods and ready meals with metal utensils in the bowl - it may lead to damage of the non-stick bowl coating and will reduce its service life.


How to switch between Fahrenheit / Celsius (in MULTICOOK)

Your Multi Cooker can switch from Fahrenheit to Celsius and from Celsius to Fahrenheit:

  • Press the SET button twice. “212” and the °F indicator are blinking.
  • To switch to Celsius press and hold REHEAT for 3 seconds “100” and °C indicators are blinking.
  • To switch back press and hold down REHEAT for 3 seconds.
  • Turn the control knob to set the temperature.
  • To save the adjustments do not press any button for three seconds.

PROGRAMMES

MULTICOOK Program

The program can be used to cook any dish with your own time and temperature settings. Default time is 30 minutes. It can be adjusted from 2 minutes to 12 hours in 1 minute intervals. You can manually set 28 temperature adjustments from 95°F (35°C) to 340°F (170°C). Default temperature is 212°F (100°C).


QUICK COOK Program

The program is recommended for quick-cooking rice and other types of grain. The temperature and time cannot be adjusted; KEEP WARM and TIME DELAY are not applicable.

  • Follow steps 1-3 of the “Standard Operating Procedure for Automatic Programs”.
  • Use the control knob to select QUICK COOK (the program indicator starts flashing, “– – – –” is displayed).
  • Press START/KEEP WARM. The button indicator lights up, the cycle begins. The Progress bar indicator is displayed.
  • After the cycle is complete an audible sound is heard, the program indicator goes off. The appliance switches to standby.
  • To interrupt the cycle or to cancel the program press CANCEL.

RICE/GRAINS Program
The program is recommended for cooking rice and different types of grain. Default time is 25 minutes. It can be adjusted from 5 minutes to 4 hours in 1 minute intervals.


STEAM Program

The program is recommended for steaming meat, fish, vegetable, seafood, etc. Default time is 30 minutes. It can be adjusted from 5 minutes to 2 hours in 5 minute intervals. The countdown starts after water comes to a full boil providing enough steam.

  • Fill the bowl with 2 ½ - 4 cups (600-1000 ml) of water. Place the steam tray inside the bowl.
  • Measure ingredients according to the recipe, evenly distribute them inside the tray. Position the bowl inside the appliance and slightly rotate it from side to side to ensure that it makes full contact with the heating element.
  • Follow steps 3-8 of “Standard Operating Procedure for Automatic Programs”.

BOIL Program
The program is recommended for boiling meat, fish, and vegetables. Default time is 45 minutes. It can be adjusted from 10 minutes to 8 hours in 5 minute intervals.

SOUP Program
The program is recommended for making different types of soup. Default time is 1 hour. It can be adjusted from 10 minutes to 8 hours in 5 minute intervals.

SAUTE Program
The program is recommended for sauteing meat, fish, and vegetable dishes. Default time is 18 minutes. It can be adjusted from 5 minutes to 2 hours in 1 minute intervals. TIME DELAY is not applicable in this program. 

BAKE Program
The program is recommended for baking cakes, from puff or yeast pastry dough. Default time is 50 minutes. It can be adjusted from 10 minutes to 8 hours in 5 minute intervals. The KEEP WARM time is up for 4 hours long.

STEW/CHILI Program
The program is recommended for stewing meat, fish, and vegetables. Make meat, vegetarian, poultry chili. Default time is 1 hour. It can be adjusted from 10 minutes to 12 hours in 5 minute intervals.

SAUCE Program
The program is recommended for making different sauces. Default time is 20 minutes. It can be adjusted from 5 minutes to 1 hour in 5 minute intervals.

YOGURT Program
Make healthy and delicious yogurt at home. Default time is 8 hours. It can be adjusted from 10 minutes to 12 hours in 5 minute intervals. KEEP WARM is not applicable for this program.

DESSERT Program
The program is recommended for making different desserts. Default time is 30 minutes. It can be adjusted from 5 minutes to 2 hours in 5 minute intervals.

PANCAKE Program
The program is recommended for cooking different kinds of pancakes. Default time is 10 minutes. It can be adjusted from 5 minutes to 1 hour 30 minutes in 1 minute intervals. KEEP WARM and TIME DELAY are not applicable.

OMELET Program
The program is recommended for making omelets. Default time is 10 minutes. It can be adjusted from 5 minutes to 1 hour in 1-minute intervals. KEEP WARM is not applicable for this program.

OATMEAL Program
The program is recommended for cooking oatmeal, different porridges with milk, jams. Default time is 30 minutes. It can be adjusted from 5 minutes to 4 hours in 1 minute intervals. Use pasteurized low-fat milk to cook. For best results and in order to prevent milk from boiling away, we recommend you to do the following:

  • rinse grain (rice, millet, etc.) thoroughly until water runs clear
  • grease the sides of the bowl with butter
  • follow proportions suggested in the recipe book, increase or reduce amount of ingredients proportionately
  • using whole milk dilute it by half with water

VACUUM Program
The program is recommended for cooking vacuum sealed products. Default time is 2 hours 30 minutes. It can be adjusted from 10 minutes to 12 hours in 5 minutes intervals. KEEP WARM is not applicable for this program.

PIE Program
The program is recommended for cooking pies, tarts. Turn a pie over to get a cooked pie pastry from both sides. Default time is 30 minutes. It can be adjusted from 10 minutes to 4 hours in 5 minute intervals. The KEEP WARM time is up for 4 hours long.

RAVIOLI Program
The program is recommended for cooking ravioli. Default time is 13 minutes. Cooking time can be adjusted from 10 minutes to 1 hour in 1 minute intervals. The program time starts to countdown only when the device reaches its operating temperature (water comes to a full boil). KEEP WARM and TIME DELAY are not applicable.

CASSEROLE Program
The program is recommended for making vegetable, chicken, meat, fish, etc. casseroles. Default time is 30 minutes. It can be adjusted from 5 minutes to 2 hours in 5 minute intervals. The KEEP WARM time is up for 4 hours long.

PASTA Program
The program is recommended for cooking pasta. Default time is 8 minutes. It can be adjusted between 2 minutes and 1 hour in 1 minute intervals. The program time starts to countdown only when the device reaches its operating temperature (water comes to a full boil). KEEP WARM and TIME DELAY are not applicable.

PIZZA Program
The program is recommended for making pizza. Default time is 30 minutes. It can be adjusted from 10 minutes to 1 hour in 5 minute intervals.

BREAD Program
The program is recommended for baking wheat and wheat-rye bread. The program includes proofing and baking cycles. Default time is 3 hours. It can be adjusted from 10 minutes to 6 hours in 5 minute intervals. The KEEP WARM time is up for 3 hours long.

PILAF Program
The program is recommended for making different rice pilafs. Default time is 1 hour. It can be adjusted from 10 minutes to 2 hours in 5 minute intervals.

CRUST Program
The program is recommended for browning. Default time 18 minutes. It can be adjusted from 5 to 40 minutes in 5 minute intervals. KEEP WARM and TIME DELAY are not applicable.

SLOW COOK Program
The program is recommended for making slow cooked dishes. Default time is 3 hours. It can be adjusted from 30 minutes to 12 hours in 10 minute intervals.
KEEP WARM is not applicable for this program.


SPECIAL FUNCTIONS

What is KEEP WARM?


Multi Cooker is equipped with the “Keep Warm” function which automatically activates in the end of cooking cycle and keeps the meal warm and ready to serve for hours.


What is Time Delay?


With the TIME DELAY function you can delay the cooking process for a period of up to 24 hours. Set the timer to have nourishing breakfast or sophisticated dinner ready precisely on time.


What is MASTERCHIEF?


MASTERCHIEF cooks under high or normal pressure and features a time setting range from 2 to 99 minutes. This mode enables you to cook any meal of your choice.


What is REHEAT?


The function allows reheating cold dishes.


ADDITIONAL FEATURES


Multi Cooker REDMOND can also make fondue, cheese. You can use your device for sterilization and pasteurization.


COOKING RECOMMENDATIONS

Why couldn’t I manage to achieve the desired result following a recipe?


Published recipes are given just for example.

 The bread isn't properly cooked in the «Bread» programme
The «Bread» programme includes dough proofing within 1 hour, then goes baking process which lasts for 2 hours. If your bread isn't properly baked you may re-enable the programme, however the cooking time should not exceed 50 minutes to prevent the dough proofing mode from enabling.

The dough won't rise
To make the dough rise it is recommended to: properly bolt the flour, use yeast and eggs stored for no longer than 1 month from the day of production. It is not recommended to open the lid of the appliance during baking process because it may lead to the dough falling. Put the device into a warm place without draughts.

The “Stew” programme stops its operation in 2-3 minutes; the Keep Warm mode will be enabled
In this case the overheat protection is activated and the appliance stops its operation. Add 50-100 ml of liquid to prevent this from happening.

The food burns when frying
We recommend you to add vegetable oil. Reduce cooking time. The bowl coating is probably worn out. 

The countdown doesn't start during frying.
To start the countdown in the “Fry” programme you should open the lid and pour the oil into the bowl. Put the products after the programme starts to count down.

Pastry burns
We recommend you to use the parchment paper. Reduce the cooking time. Grease the bowl with the butter. The bowl coating is probably worn out. We recommend you to remove the steam valve when baking foods.

The condensate falls into the bowl and products instead of flowing into the special container/chute
The condensate accumulates on the inside of the lid. To let the condensate flow into the container, hold the lid for a few seconds at an angle 30-45 degrees to the table while opening. 

A lot of condensate is generated while baking, it falls into the products. 
It is recommended to remove the steam valve to reduce the condensation when baking.

Extra water in pilaf/ pilaf is sticky
We recommend you to use round-grain polished rice. When covering the rice with water it should exceed the amount of rice by 70 ml.

Porridge boils away
It is recommended to use milk with 2.5% butterfat and less or dilute it by half and rinse the grains until water runs clear. For making rice porridge it is recommended to use round-grain polished rice.

Soup boils away
As a rule, excess foam, which can boil away from the steam valve, is formed due to thermal processing of starch, vegetable and animal fat. To eliminate excess foam it is recommended to:

  • Properly rinse the meat, vegetables, grains before cooking.
  • Meat can be preliminarily fried.
  • Water quantity probably exceeds the permissible level.

We recommend you to rinse the meat or fish. If you've bought meat in a large store or hypermarket, additionally rinse it after cutting.

Is it normal that the countdown isn't enabled for the "fry" mode?
Yes, it is. This mode doesn't provide cooking without the user.

Should the cooking time be increased if I want to double the portion size?
If the portion size is increased, cooking time should be extended by 10-15 minutes so that the Multi Cooker reaches the desired temperature.

Can I open the lid of the multicooker during cooking?
You may open the lid of the Multi Cooker if You need to add some ingredients. The time of cooking with an open lid should be minimized.


IMPORTANT: this recommendation is only for the multi cooker.


Can I open the lid of the PRESSURE COOKER during cooking?

To properly and safely open the pressure multi cooker it is necessary:

To turn the valve into the "open" position at the end of the programme and wait for the final pressure release.
After the steam stops to escape from the valve, or the steam isn't released under pressure it is necessary to turn the pressure cooker lid in the indicated direction (usually counter clockwise) and remove the lid.

P.S. It is not recommended trying to open the lid of the pressure cooker during operation or during pressure release as it may lead to negative consequences, the lid can be pulled off.


Why does the countdown not start immediately in such programmes as "soup", "porridge", etc?


The countdown starts at the moment when the programme reaches the working temperature.


MULTICOOKER MAINTENANCE 

How REDMOND multi cookers react on power failures/power-down?


It won't work without power supply. All multi cookers have a non-volatile memory, thanks to which the mode won't be reset and the appliance will continue operation with resumed electric power.


Is it allowed to wash the teflon bowl in a dishwasher?


The bowl can be washed in a dishwasher with eco-mode.

Can I wash the housing of a multi-cooker under running water and how should I clean the bottom heating element?
You can clean the Multi Cooker and heating element only with soft damp sponge. Remember not to enable the multi-cooker until the heating element completely dries.


How often should I clean the steam valve?


We recommend you to clean the steam valve after each use.
